Date and Goji berry cookies


As you all know by now, I love baking cookies. Most of the time they are chocolate cookies. To spice things up a bit, I decided to bake oat cookies this time with what I had in the cupboard - without any chocolate! I bought a little packet of Goji berries from Tesco a couple of weeks ago, usually I will have them in a bowl of fruit, use them for making tea or have them on top of ice cream. I thought I'd try them in cookies! 

These came out amazing so I will share my recipe with you!




Ingredients: 

  • A handful of dates
  • A handful Goji berries
  • 1/2 cup water (berry soaked water)
  • 1 egg
  • 2 tablespoons peanut butter
  • 2 cups oats
  • 1 - 3 tablespoons coconut flour (just to make it thicker)
Directions:
  • Preheat the oven to 180 degrees and line a baking tray
  • Soak dried fruit (dates and Goji berries) in a small bowl with water and set aside. Let them soak at least 5 minutes
  • In a larger bowl, beat an egg lightly and add peanut butter. Mix until creamy
  • Add the soaked fruit with water to the mixture and fold it in
  • Add oats one cup at a time and mix
  • If the cookie mixture is still a bit wet and need thickening, add one  tablespoon of coconut flour at a time until it has the right consistency
  • Form small cookie balls and put them on a tray. Press them down slightly
  • Bake for 10 to 15 minutes until golden 
  • Once they are done and out of the oven, let them cool for about 20 minutes

I didn't use any sugars or sweeteners in this cookie recipe, as dates are already quite sweet when they are dried, soaking them in water helps make them even sweeter. Soaking Goji berries in water will stop them from absorbing a lot of the moisture, stopping the cookies from drying out. This leaves you with moist and not overly sweet cookies.
I love Goji berries as they contain Vitamin A, C and Iron and are a good alternative to snacking on sweets. You can enjoy these cookies with a glass of milk or a cup of tea.

The Body Shop Manchester Arndale Bloggers Event

I've been blogging for almost two years now but I'd still consider myself a newbie in the blogging world. On Thursday I had the chance to go to my first bloggers event at The Body Shop in Manchester to celebrate the release of an amazing new range on the 5th of May, including new bronzing items and a couple of vitamin C products! OOTD - The sun has come out!

It has been such a long time since my last fashion post, I've been missing them so much! The second the sun came out, Tristan and I went to the canal and took a few pictures. I think it is still too early for sunglasses but a light jacket is okay when you wear a jumper underneath (Primark) and a cosy leopard print scarf (Linea Cashmink) around your neck.  My black Veromoda jacket and shoes are both from Best Secret. Lilla Rose Flexi Clips

  Today I want to talk a bit about my hair and my recent purchase from a company called Lilla Rose . Lilla Rose is a unique hair and jewellery accessory company from the US. They have many different hair items but I was more interested in their beautiful and well-known Flexi Clip. I got myself two of these - Autumn's Delight in size small and Festive Leaf in extra small. Before ordering I made sure of which size would fit best for my flat and thin hair.       Both of my Flexi Clips look stunning. The beaded wire is quite bendable but strong, the sliding pin is adjustable and they feel high-quality. I chose mine in a copper/rust shade but there are also silver and gold shades and so many different styles and colours available. As I recently cut my long hair short, I don't have many options with styling. I usually just wear my hair in a ponytail or a half ponytail.
