Lemon and poppy mini cakes recipe

The other day I tried to make some lemon and poppy seed muffins but they came out more like mini cakes. I didn't use self raising flour or baking powder, which I guess is the reason why. They came out pretty good anyway so I thought I'd share this recipe with you.



Ingredients:
  • 2 cups of flour
  • 1/2 cup of brown sugar
  • 2 tablespoons poppy seeds
  • 1/2 cup salted butter
  • Juice and zest of 2 medium lemons
  • 2 large eggs
  • 1/2 cup non-fat or low-fat Greek or regular yogurt
  • 1 teaspoon vanilla extract
Instructions: 
  • Preheat oven to 180 degrees. Lay muffin pan with muffin tins.
  • In a large bowl, whisk the dry ingredients flour, brown sugar and poppy seeds together until thoroughly mixed.
  • In a medium bowl, whisk the melted butter, lemon juice and lemon zest together until combined. Add the eggs, one at a time. Whisk in the yogurt and vanilla. 
  • Pour the wet ingredients into the dry ingredients and gently mix together but make sure not to overmix.
  • Spoon the batter into the muffin tins. I didn't fill them all the way to the top so mine came out quite thin.
  • Bake for about 15 minutes until the tops are lightly golden. 
  • Let cool for 10 minutes.
 

I like to have a couple of cakes with my Australian Bush Tea. They are such a nice treat and they are a good change to always baking with chocolate.

The Body Shop Manchester Arndale Bloggers Event

I've been blogging for almost two years now but I'd still consider myself a newbie in the blogging world. On Thursday I had the chance to go to my first bloggers event at The Body Shop in Manchester to celebrate the release of an amazing new range on the 5th of May, including new bronzing items and a couple of vitamin C products! OOTD - The sun has come out!

It has been such a long time since my last fashion post, I've been missing them so much! The second the sun came out, Tristan and I went to the canal and took a few pictures. I think it is still too early for sunglasses but a light jacket is okay when you wear a jumper underneath (Primark) and a cosy leopard print scarf (Linea Cashmink) around your neck.  My black Veromoda jacket and shoes are both from Best Secret. Lilla Rose Flexi Clips

  Today I want to talk a bit about my hair and my recent purchase from a company called Lilla Rose . Lilla Rose is a unique hair and jewellery accessory company from the US. They have many different hair items but I was more interested in their beautiful and well-known Flexi Clip. I got myself two of these - Autumn's Delight in size small and Festive Leaf in extra small. Before ordering I made sure of which size would fit best for my flat and thin hair.       Both of my Flexi Clips look stunning. The beaded wire is quite bendable but strong, the sliding pin is adjustable and they feel high-quality. I chose mine in a copper/rust shade but there are also silver and gold shades and so many different styles and colours available. As I recently cut my long hair short, I don't have many options with styling. I usually just wear my hair in a ponytail or a half ponytail.
