Apple and Almond Butter cupcakes // recipe



It has been almost two months since I last blogegd and I've been missing it a lot! The beginning of the year has been quite hectic for me. I will share more about the year so far later but at the moment I want to share an amazing cupcake recipe I came up with recently! 

You will all know by now that I am trying to eat as clean as possible, so I'm always trying to invent something new with healthy ingredients I find in my kitchen. I usually have some small jars of nut butters laying around in the cupboard, just because they are super easy to use in baking. I've noticed that they make muffins and cupcakes moist and soft, so they work as a good substitute for regular dairy butter.

Ingredients:
  • 2 eggs 
  • 1 cup unsweetened apple sauce 
  • 1/4 cup unsweetened almond milk 
  • 1/4 cup Greek yogurt
  • 1 tablespoon vanilla extract 
  • 4 tablespoons almond butter 
  • 2 cups self raising flour
  • 2 tablespoons brown sugar or coconut sugar 
  • 1 teaspoon baking soda 
  • 2 teaspoons cinnamon 
  • 1/2 teaspoon sea salt 
Icing:
  • 1 tablespoon almond butter
  • 3 tablespoons coconut milk
  • 1 tablespoon coconut sugar
Instructions:
  1. Preheat the oven to 180 degrees and line a muffin tin with cupcake cases.
  2. Mix all of the wet ingredients together - eggs, apple sauce, almond milk, Greek yogurt, vanilla extract and almond butter. Don't forget to stir after adding each ingredient.
  3. Using a whisk, gently stir in the self raising flour and baking soda. Lastly, add the sugar.
  4. Pour the batter into the cupcake cases, filling each about 3/4 of the way full. 
  5. Bake in the oven for 22 minutes, until golden brown.
  6. Allow to cool for at least 10 to 15 minutes then add the icing and decorate your cupcakes as desired.

The Body Shop Manchester Arndale Bloggers Event

I've been blogging for almost two years now but I'd still consider myself a newbie in the blogging world. On Thursday I had the chance to go to my first bloggers event at The Body Shop in Manchester to celebrate the release of an amazing new range on the 5th of May, including new bronzing items and a couple of vitamin C products! OOTD - The sun has come out!

It has been such a long time since my last fashion post, I've been missing them so much! The second the sun came out, Tristan and I went to the canal and took a few pictures. I think it is still too early for sunglasses but a light jacket is okay when you wear a jumper underneath (Primark) and a cosy leopard print scarf (Linea Cashmink) around your neck.  My black Veromoda jacket and shoes are both from Best Secret. You'll all know by now how much I've been raving about it. I think it is an amazing place for online shopping. Lilla Rose Flexi Clips

  Today I want to talk a bit about my hair and my recent purchase from a company called Lilla Rose . Lilla Rose is a unique hair and jewellery accessory company from the US. They have many different hair items but I was more interested in their beautiful and well-known Flexi Clip. I got myself two of these - Autumn's Delight in size small and Festive Leaf in extra small. Before ordering I made sure of which size would fit best for my flat and thin hair.       Both of my Flexi Clips look stunning. The beaded wire is quite bendable but strong, the sliding pin is adjustable and they feel high-quality. I chose mine in a copper/rust shade but there are also silver and gold shades and so many different styles and colours available. As I recently cut my long hair short, I don't have many options with styling. I usually just wear my hair in a ponytail or a half ponytail.
