Coconut Cream Banana Goji Berry Muffins

Recently, one of my favourite things to bake with has been banana. I always buy big bags of fruit and have found that most of the time I am not able to finish it all. I usually leave bananas until last, as they keep longer and I like them more when they are sweet and soft. Also if I am ever in the mood for baking, ripe bananas are the best!

Another recent obsession of mine has been coconut milk and coconut cream. I use coconut milk in soups, sauces and curries; while I use coconut cream in cakes, muffins, smoothies and cocktails. Rather than buy ready-made coconut creams, I make it myself by seperating it from coconut milk. Coconut cream ''appears'' when you leave your coconut milk to sit in the fridge overnight. The milk separates and the non-liquidy creamy part rises to the top - coconut cream! By shaking the cream you can combine it back into the milk. There is even a way to make a coconut whipped cream, although I've not tried it yet.

Ingredients:
  • 1/4 cup butter, melted
  • 1 cup coconut cream
  • 3 eggs
  • 2 tablespoons brown sugar
  • 3 medium ripe bananas, mashed
  • 1 teaspoon vanilla essence
  • 1/4 teaspoon fresh lemon juice
  • 1 teaspoon baking soda
  • 2 cups self raising flour
  • 1/2 teaspoon salt
  • 1 handful Goji berries, soaked
  • 2 teaspoons poppy seeds (optional)
Directions:
  • Heat oven to 180°C and line a baking tray.
  • Soak dried fruit in water while making the muffin mix. I used dried Goji berries but any dried or fresh fruit will do.
  • In a large bowl, mash bananas with a fork.
  • Add wet ingredients one at a time and stir after each one is added - eggs, melted butter, coconut cream, vanilla essence and lemon juice.
  • Add brown sugar and salt.
  • Sift in flour and baking soda and mix thoroughly.
  • Add soaked berries at the end (I also added some poppy seeds here as I think they are amazing combined with banana)
  • Spoon the batter into muffin tins and bake for 15 to 20 minutes until golden brown.
  • Remove from muffin tin and cool.

The Body Shop Manchester Arndale Bloggers Event

I've been blogging for almost two years now but I'd still consider myself a newbie in the blogging world. On Thursday I had the chance to go to my first bloggers event at The Body Shop in Manchester to celebrate the release of an amazing new range on the 5th of May, including new bronzing items and a couple of vitamin C products! I was wearing my butterfly bow-tie brooch to the event and styled it with a white short sleeved shirt. It was a closed door event, so it was a good opportunity to browse all of the products and explore the new ones thoroughly! The event started at 8pm and I was one of the first ones to arrive. We were welcomed with milkshakes, fruit cocktails and lemonade. I went for water - shy and modest! There was also a white chocolate fountain and strawberries we had the chance to enjoy. The event was carried out by Fiona - she is a skin expert at the Manchester store. Everyone was able to get personal skin consult...

OOTD - The sun has come out!

It has been such a long time since my last fashion post, I've been missing them so much! The second the sun came out, Tristan and I went to the canal and took a few pictures. I think it is still too early for sunglasses but a light jacket is okay when you wear a jumper underneath (Primark) and a cosy leopard print scarf (Linea Cashmink) around your neck.  My black Veromoda jacket and shoes are both from Best Secret. You'll all know by now how much I've been raving about it. I think it is an amazing place for online shopping. I love the copper detailing and the simple look on my jacket, plus it's super lightweight. My trainers are by Puma & Alexander McQueen (click here to read my previous post). I also just noticed that I don't have any good shots of my Michael Kors bag, which I absolutely adore by the way! I'm sure everybody knows how beautiful these bags are so I think this will do for now. The bag and scarf were both Christmas presents fr...

Lilla Rose Flexi Clips

Today I want to talk a bit about my hair and my recent purchase from a company called Lilla Rose . Lilla Rose is a unique hair and jewellery accessory company from the US. They have many different hair items but I was more interested in their beautiful and well-known Flexi Clip. I got myself two of these - Autumn's Delight in size small and Festive Leaf in extra small. Before ordering I made sure of which size would fit best for my flat and thin hair.       Both of my Flexi Clips look stunning. The beaded wire is quite bendable but strong, the sliding pin is adjustable and they feel high-quality. I chose mine in a copper/rust shade but there are also silver and gold shades and so many different styles and colours available. As I recently cut my long hair short, I don't have many options with styling. I usually just wear my hair in a ponytail or a half ponytail. Autumn's Delight fits all my hair between the clip and Festive Leaf is perfect for a smal...
