Energy bars - oats, dates and cashews


I love snacking. Each time I'm out shopping, I always pick up a few different bars (Nākd's my favourite) for in between meals and at work. These shopping trips can end up a bit expensive, as sometimes one bar is not enough. I've been making my own bars for a little while now and they have been pretty good, so I will share my recipe. Most store bought and homemade bars I have found have been raw - I've been baking them though as I love baked oats and their golden colour. 

Ingredients:
1 banana
1/4 cup honey 
1 cup jumbo oats
1/4 cup cashews
1/3 cup dried fruit - I used dates

Instructions: 
  • Heat oven to 180°C and line a baking tray
  • Mash banana with fork and crush cashews. I put nuts inside a little plastic bag and smash them with a rolling pin
  • Soak dried fruits in warm water for just a few minutes
  • Mix all of the ingredients together - oats, nuts, fruit, then add banana and honey
  • Bake until golden brown (10 to 15 minutes)
There are a few options for forming the bars, the easiest I have found is to use a sushi mat or a cookie cutter. I used a little measuring cup. I take a 1/3 cup and press the mixture into it halfway, before turning it upside down and shaking it onto the tray. The moist oat mix sticks together easily.

They are healthy, tasty and are good for a bit of energy!

The Body Shop Manchester Arndale Bloggers Event

I've been blogging for almost two years now but I'd still consider myself a newbie in the blogging world. On Thursday I had the chance to go to my first bloggers event at The Body Shop in Manchester to celebrate the release of an amazing new range on the 5th of May, including new bronzing items and a couple of vitamin C products! Kayla Itsines Bikini Body Guide - Starting again

The last time I posted about my workout regime was in November last year when I started the Kayla Itsines BBG healthy eating plan and 12 week workout sessions. I think I got up to week 4 before I lost my motivation because of illness and Christmas. OOTD - The sun has come out!

It has been such a long time since my last fashion post, I've been missing them so much! The second the sun came out, Tristan and I went to the canal and took a few pictures. I think it is still too early for sunglasses but a light jacket is okay when you wear a jumper underneath (Primark) and a cosy leopard print scarf (Linea Cashmink) around your neck.  My black Veromoda jacket and shoes are both from Best Secret. You'll all know by now how much I've been raving about it. I think it is an amazing place for online shopping. I love the copper detailing and the simple look on my jacket, plus it's super lightweight. My trainers are by Puma & Alexander McQueen (click here to read my previous post).
