Dark chocolate chunk oat cookies

Everybody knows by now how much I love cookies, especially when they are homemade and healthy. I'll be sharing a very easy, quick and yummy oat cookie recipe which I am baking almost every week! 



Ingredients: 
  • 1 egg
  • 1/2 cup Rice Milk
  • 1/4 cup Crunchy Hazelnut Butter
  • 1/3 cup Honey
  • 100 g Chocolate Chunks
  • 2 cups Jumbo Oats


 

Instructions: 
  • Preheat oven to 180C and line a baking pan 
  • Mix all the wet ingredients together in a small bowl - beat eggs, then stir in milk and honey, add hazelnut butter 
  • In another bowl mix oats and chocolate chunks
  • Pour wet ingredients into oats and combine well

  • I used a cookie cutter to get this lovely heart shape. I placed the cutter on a sheet and filled it with the mixture. If you don't have a cookie cutter, you can just place a spoon full of the mixture onto a baking sheet - they keep their form!

  • Bake for 10 to 15 minutes. Because they are flourless they take less time to bake, I usually keep them in the oven for about 12 minutes. For a more crispy texture you can leave it longer
  • Once they are done and are out of the oven, let them cool for about 20 minutes on the bench


 So here they are, ready to eat with a glass of milk or a cup of tea.

The Body Shop Manchester Arndale Bloggers Event

I've been blogging for almost two years now but I'd still consider myself a newbie in the blogging world. On Thursday I had the chance to go to my first bloggers event at The Body Shop in Manchester to celebrate the release of an amazing new range on the 5th of May, including new bronzing items and a couple of vitamin C products! Kayla Itsines Bikini Body Guide - Starting again

The last time I posted about my workout regime was in November last year when I started the Kayla Itsines BBG healthy eating plan and 12 week workout sessions. I think I got up to week 4 before I lost my motivation because of illness and Christmas. OOTD - The sun has come out!

It has been such a long time since my last fashion post, I've been missing them so much! The second the sun came out, Tristan and I went to the canal and took a few pictures. I think it is still too early for sunglasses but a light jacket is okay when you wear a jumper underneath (Primark) and a cosy leopard print scarf (Linea Cashmink) around your neck.  My black Veromoda jacket and shoes are both from Best Secret. You'll all know by now how much I've been raving about it. I think it is an amazing place for online shopping. I love the copper detailing and the simple look on my jacket, plus it's super lightweight. My trainers are by Puma & Alexander McQueen (click here to read my previous post). I also just noticed that I don't have any good shots of my Michael Kors bag, which I absolutely adore by the way!
